Apple pie with almonds and pine nuts

For the pie filling
Ingredients
1st mixture
1.5 kg sour apples, cut into square pieces
340g granulated sugar
390g water
2nd mixture
90g corn flour
100g water
(Diluted together)
3rd mixture
100g almond fillet
50g pine nuts
2g ground cinnamon
Method
Heat the 1st mixture and boil for 4΄. Then, add the 2nd mixture while stirring very well, and finally add the 3rd mixture.
For the tart
Ingredients
1st mixture
250g cow butter
125g powdered sugar
2g salt
2nd mixture
2 eggs
3rd mixture
500g soft flour
4g baking powder
Method
Place the ingredients of the 1st mixture in a mixer and beat using the paddle attachment for about 3΄. When it starts to become fluffy, gradually add the 2nd mixture until fully homogenized. Then add the 3rd mixture while mixing on low speed until maximum consistency is achieved. Place the dough in the refrigerator for 1/2 hour and then roll it out. Place it in a tart pan, lay down 1 sheet, then add the apple pie filling, and cover with another sheet on top. Bake the apple pie at 175°C for 35-40΄ until golden-brown in color.
