Savory loukoumades (traditional Greek dough balls) from Patras with garos (fish sauce), feta cheese, pistachios, honey, and spearmint

Ingredients
1st mixture
14g fresh yeast or 5 g dry yeast
2g granulated sugar
50g water
2nd mixture
10g granulated sugar
2g garos
1g ground cinnamon
250g water
3rd mixture
250g strong flour
4th mixture
200g grated feta cheese
5th mixture
Honey
Pistachios from Aegina island
Walnuts
Method
Mix the ingredients of the 1st mixture in a small bowl and let the yeast activate. Once activated, add the 2nd mixture into the 1st mixture, stirring well, and then add the 3rd mixture. Cover the mixture and let it rise for approximately 40΄. Once risen, add the ingredients of the 4th mixture, stirring well, then cut the loukoumades with a spoon, fry them, drain them, and pour over the aromatic honey from the 5th mixture. Serve with fresh spearmint.

Patras loukoumades delightfully blend sweet and savory flavors. The ancient fish sauce, garos, that has been revived in culinary creations, adds a depth of flavor to the dish. Honey, in turn, whether fir or oak or thyme honey, originating from Mt. Helmos, Achaia, or from Foloi, Ilia, or other areas of the Region of Western Greece, contributes its rich, sweet taste. Moreover, fresh spearmint from rural areas in Western Greece adds aromatic notes to the dish.
